This year we have decided to share with you the most traditional family recipes from around the world. Of course, at the beginning of the year we will not start with the traditional sirloin, but a little lighter dish that is loved all over the world, however, it has its roots in Italy during the Renaissance.
Chicken Cacciatore Recipe:
INGREDIENCE :
3 tablespoons olive oil, divided
6 skinless chicken thighs with bone
Salt and pepper for seasoning
1 medium onion, diced
2 tablespoons minced garlic (or 6 cloves)
1 small yellow pepper, diced
1 small diced red pepper
1 large carrot, peeled and sliced
300g mushrooms, sliced
1/2 cup pitted black olives
8 sprigs of thyme
2 tablespoons freshly chopped parsley and basil and more for garnish
1 teaspoon dried oregano
150 ml red wine
820g crushed tomatoes
2 tablespoons tomato puree
200g roma tomatoes, halved - elongated tomato sticks
1/2 teaspoon red chilli flakes
PROCEDURE:
Season the chicken with salt and pepper.
Heat 2 tbsp oil in a heavy cast iron pan. Brown the chicken on both sides until golden brown, about 3-4 minutes on each side. Remove from the pan and set aside.
Add the remaining oil to the pan. Sauté the onion until transparent, about 3-4 minutes. Add the garlic and cook until softened, about 30 seconds. Add bell pepper, carrots, mushrooms and herbs; cook 5 minutes until vegetables begin to soften.
Pour in the wine and scrape the browned bits from the bottom of the pan. Cook until wine is reduced, about 2 minutes.
Add the crushed tomatoes, tomato paste, roma tomatoes and chili flakes. Season with salt and pepper to taste. Return the chicken pieces to the pan and continue cooking on the stove OR in the oven according to the instructions below.
FOR THE HOB:
Cover with a lid, reduce heat to low and let cook (stirring occasionally) for 40 minutes or until the meat falls off the bone. Add the olives and simmer for another 10 minutes. Garnish with parsley and serve immediately.
FOR THE STOVE
Transfer the covered pan to a preheated oven at 190 °C and bake for 50 minutes. Remove the lid, add the olives and cook for a further 20 minutes until the chicken is tender and falling off the bone and the sauce has reduced.
We recommend spaghetti or rice as a side dish, but it depends on your taste:)))
